Prune Bread & Orange Bread - Alice Kuhar's Recipes

1 rounded tablespoon margarine
1 cup sugar
1 egg, slightly beaten
2 1/4 cups sifted all-purpose flour
1/2 teaspoon salt
1 heaping teaspoon baking powder
1 teaspoon baking soda
1 cup bottled prune juice, heated
1 cup cooked prunes, chopped
1/2 cup chopped walnuts
1/2 teaspoon vanilla
Preheat oven to 350 degrees. Grease two 9x5-inch loaf pans. In a large
bowl, cream shortening and sugar; beat in egg. Sift flour, salt and baking
powder together. Add baking soda to hot prune juice. Alternately add
flour mixture and prune juice to egg-sugar mixture. Stir in prunes and
nuts. Stir in vanilla. Four into loaf pans. Bake at 35O degrees for 45 minutes.

5 tablespoons butter
1/2 cup sugar
1 egg, beaten
3 tablespoons grated orange rind
1/2 cup water
1/2 cup orange juice
2 cups all-purpose flour
3 teaspoons baking powder
In large bowl, cream butter, add sugar gradually, creaming while adding.
Add egg and orange rind. Sift together flour, baking powder and salt.
Add water and orange juice alternately with the flour mixture. Mix
thoroughly and put in a greased 4-3/4"x8-3/4" bread pan. Let stand 20
minutes before baking. Bake at 350 degrees for 55-60 minutes.
