Croatian Fried Cabbage with Homemade Noodles

CROATIAN FRIED CABBAGE WITH HOMEMADE NOODLES

Ingredients:
1 medium head cabbage
|
Salt
|
3 heaping tablespoons lard
|
Black Pepper
|
Noodles Ingredients:
2 cups flour
|
1/2 cup water
|
2 eggs
|

Directions:
To Make Noodles:
Cut cabbage into very thin slices. Melt lard or shortening in a pan and add the shredded cabbage. Cover, and stir frequently. Fry over medium heat until well cooked and slightly browned. Season with salt and pepper. Keep pan covered
Make Noodles as Follows:
Either on a board or a bowl, mix together flour, water and eggs. With fingers work ingredients together on a board. Knead until dough is smooth and firm. Cut dough into two parts. Roll out ball of dough thinly and cut in strips about 1 inch wide.
Bring 2 quarts of water to a boil. Add salt. Drop noodles in and cook about 10 minutes. Drain and add to browned cabbage, Cook together a few minutes and serve hot. |
