CZECH EASTER BREAD
(Mazanec)

Ingredients:
Raised Dough: 2 oz. yeast
|
1-1/4 cups sugar
|
2 cups warm milk
|
2 whole eggs
|
1/2 lb. melted butter
|
1-1/2 teaspoons salt
|
8 cups sifted flour
|
Grated Rind of 1 Lemon
|
Pinch of Mace
|
1 teaspoon vanilla
|
1/2 cup almonds
|
1/2 cup raisins
|
2 egg yolks
|

Directions:
Mix yeast with 1 teaspoon sugar and 1/2 cup scalded lukewarm milk. Let stand 10 minutes. Mix eggs, melted butter, milk, salt, and sugar in a large bowl. Add yeast mixture and enough flour to begin to make a soft dough and beat till smooth. Add grated lemon rind, mace and vanilla. Add remaining flour, except for 1 cup. Beat until dough leaves the sides of the bowl. Beat in raisins and almonds.
Turn out on floured board and let dough rest 10 to 15 minutes. Knead about 10 minutes using as much of remaining flour as needed Piace in greased bowl, cover, and let rise until doubled. Punch down, knead and let rise until doubled again. Turn out on floured board and divide dough into 2 sections. Shape each into a ball and place on greased 8 or 9-inch round cake pans. Let rise: brush with egg yolk and bake in 350 degree oven for 50 minutes until nicely browned.
