Farina Cheese Rolled Dumplings - Alice Kuhar's Recipes

(From Treasured Slovenian & International Recipes)
1 carton (12 oz.) creamed cottage cheese
6 slices bread
1 teaspoon salt
1/4 lb. butter or margarine
4 eggs
1 cup farina
1/2 cup sugar
1/2 cup bread crumbs
Cut bread into small cubes. Cream butter and add eggs, sugar, salt and cottage cheese. Blend well. Add farina, a little at a time, and mix again. Add bread cubes and mix in gently. Let mixture stand a short time.

Take a damp linen towel (about 30 inches long) and sprinkle with bread crumbs. Place the mixture with a spoon on the towel to form a row across one long end. Roll up the towel and tie the ends with string. Place in a large pot of boiling water. Cover and let simmer for 30 minutes.

Drain, untie, unroll and slice dumplings into serving pieces about 1 or 2 inches wide. Top with buttered bread crumbs.
