Lemon Strudel - Alice Kuhar's Recipes

LEMON STRUDEL
(Treasured Slovenian & International Recipes PSWA)
Lemon Filling Ingredients:
1/2 pound butter or margarine
1-1/2 cups sugar
4 eggs, separated
2 lemons, grated rind and juice
8 squares crushed graham crackers

Strudel Dough Ingredients:
1 tablespoon butter or margarine
3/4 cup lukewarm water
1 whole egg 2 cups flour
1/4 teaspoon salt
melted, or 1 tablespoon oil

Lemon Filling Directions:
Cream butter and sugar; add egg yolks which have been beaten light in color. Add cracker crumbs, lemon rind, and juice. Fold in stiffly beaten egg whites. Spread mixture evenly over stretched dough. Roll and place in greased pan. Brush top with melted butter and bake in 350degree oven for 45 minutes or until golden color. Makes filling for 2 generous strips of strudel.

Strudel Dough Directions:
Mix butter, egg, and salt in a bowl. Add lukewarm water and mix. Add flour gradually and mix to a soft pliant dough. In the bowl or on a floured board, knead for 10 minutes or more (or you may toss and beat dough on the board for about 15 minutes). If dough keeps sticking, add flour, sparingly. The more the dough is kneaded, the more elasticity it will have, and the easier it will be to work with. Place in a. greased bowl, lightly coat top with oil and cover with a dish or plastic wrap. Let rest in a warm place for about one hour. While dough rests, prepare the filling.
