Fried Potatoes - Alice Kuhar's Recipes

SLOVENIAN FRIED POTATOES
(Prazen ali tenstan krompir) (From "More Pots and Pans" Book)

Ingredients:
6 medium potatoes
|
1 teaspoon salt
|
1 medium onion, thinly sliced
|
1/8 teaspoon black pepper
|
1/4 cup lard or shortening
|
1 teaspoon chives, optional
|
|
Directions:
Wash and boil potatoes until almost tender. Cool, peel and slice. In skillet, sauté sliced onion in lard or shortening until soft. Add potatoes, salt, pepper , and chives and fry over low heat for about 15 minutes until potatoes are lightly browned, turning occasionally.

OVEN BAKED HOME-FRIED POTATOES
( Domaci krompir) (Treasured Slovenian & International Recipes)

Ingredients:
5 pounds potatoes
|
1 stick margaine
|
3 large onions, chopped
|
salt & pepper to taste
|
|
Directions:
Boil potatoes in jackets. When cooled, peel and cube the potatoes. In the meantime, sauté onions in margarine until golden, add to potatoes, add salt and pepper. Place into baking pan, which was slightly greased. Bake uncovered in 350-degree oven for about 3 minutes.
NOTE: Can be prepared on day and baked the next day. When doing so, cover potatoes with waxed paper, then aluminum foil. Do not cover only with foil. Remove both coverings to bake. If potatoes are dry add more margarine.

HOME FRIES

Ingredients:
6 potatoes
|
1 Tablespoon salt
|
1 medium onion, diced
|
2 Tablespoons butter
|
2 Tablespoons oil
|
2 Tablespoons butter
|
1/2 teaspoon paprika
|
salt and pepper
|
|
Directions:
Cook potatoes with skins on in boiling salted water until just tender. So not overcook. Meanwhile, cook onion in 2 tablespoons butter till soft and golden. Set aside. When potatoes are done, peel and dice. Heat together oil and 2 tablespoons butter in frying pan. Add potatoes and paprika. Cook, stirring often to brown. Add salt and pepper to taste. Just before serving, add onions.

HOME FRIED POTATOES

Ingredients:
3 medium Idaho potatoes
|
1/4 cup oil
|
3/4 cup butter, cut up
|
salt and pepper
|
|
Directions:
Peel potatoes and slice thin. (Do not wash peeled slices. pat with paper towels to remove excess moisture.) In bottom of a large heavy skillet, beginning in center, arrange potatoes in circles, overlapping slices. Melt butter in a small saucepan, spoon off foam, then carefully pour clarified butter into a cup, leaving cloudy residue in the bottom of saucepan. Add oil to butter in cup, pour over potatoes in skillet. Fry over medium heat for 10 minutes, until slices stick together and are brown on bottom. With a spatula, carefully lift and turn over entire round of potatoes, as a pancake would be turned. Fry for another 10 minutes or until both sides are crisp and golden brown. Drain off all fat from pan. Turn potato circle out onto a hot round platter. Sprinkle with salt and pepper and serve at once.
