PUMPKIN BREAD
(Celeste Frollo)
|
Ingredients:
1-1/2 cups plus 2 tablespoons flour
|
1-1/2 cups sugar
|
3/4 teaspoon salt
|
1 teaspoon baking soda
|
1/2 teaspoon cinnamon
|
1/2 teaspoon nutmeg
|
1/2 cup melted shortening
|
2 eggs, slightly beaten
|
1/3 cup water
|
1 cup canned pumpkin
|
|
Directions:
Sift together: flour, sugar, salt, baking soda, cinnamon, and nutmeg. Beat shortening, eggs, water and pumpkin together: combine with dry ingredients, by hand only, until dry ingredients are moist. Bake in greased 9x5x3" loaf pan at 350 degrees for 60-55 minutes or until tester comes out clean. Cool 10 minutes on rack before removing from pan. Cool completely before serving. (Recipe can easily be doubled.)

PUMPKIN BREAD II
|
Ingredients:
3 cups sugar
|
1 cup vegetable oil
|
4 eggs, beaten
|
1 can. pumpkin (not seasoned)
|
3-1/2 cups flour
|
1 teaspoon baking powder
|
2 teaspoons baking soda
|
1/2 teaspoon cloves
|
1 teaspoon cinnamon
|
1 teaspoon nutmeg
|
1 teaspoon allspice
|
|
Directions:
Mix together sugar, oil and eggs. Mix remaining ingredients into mixture.Stir in: 2/3 cup water 1/2 cup chopped nuts. Pour batter into 2 ungreased bread pans. Bake at 350 degrees for 1 hour and 15 minutes or until done. Makes 2 loaves.
