Sauerkraut & Pork - Alice Kuhar's Recipes

PORK, SAUERKRAUT & BARLEY DISH

Ingredients:
There are no exact measurements for this recipe. Just add amounts according to your own personal preference.

Pork meat (chops, spareribs, neckbones, small pork roast)
Sauerkraut
Barley
Optional: Tomatoes or tomato sauce
Directions:
Pour enough barley into the bottom of a casserole dish to cover the bottom. Layer on top with sauerkraut, washed according to your taste. Add optional tomatoes. Top with pork meat. Cover and bake slowly at 300 degrees for about 3 hours. Check occasionally to see that there is enough liquid to cook barley in the dish. If necessary, add more water. About halfway through baking, remove dish and stir contents, then return to oven to finish baking.

SPARERIBS & SAUERKRAUT
Ingredients:
2 - 3 lbs. Sauerkraut
2 tablespoons fat
2 large onions, sliced
1 / 2 cup hot water
1 / 4 teaspoon salt
Pinch of pepper
Directions:
Brown ribs in hot fat in Dutch oven. Add onions, salt, pepper and water. Cover; simmer over low heat for 1 hour. Add sauerkraut, and cook 30 minutes longer.
